Vanilla Butter Pound Cake
I sure love me some pound cake. Any kind of pound cake will do, but a classic vanilla pound cake is always my go to. It can be a base recipe–add a glaze, swirl in some jam, or layer it with cream cheese! You can’t go wrong! Here’s my recipe for the most delicious, buttery, vanilla pound cake!
Step numero uno: gather butter, sugar, vanilla, eggs, milk, flour, baking powder, salt, and sour cream. You’ll want to grab them early in the day, so the cold ingredients can come to room temperature. Makes for a better cake
When I decided to make this cake, my butter wasn’t quite soft enough to bake with. I obviously didn’t follow my own advice… So while I waited, I decided to make some lunch! For me AND the girls I’ll post about this recipe soon!
So after lunch, and a couple diaper changes, I came back to finish up my pound cake. In a mixing bowl, I combined the dry ingredients and set that aside. This step wasn’t quite picture worthy, so no picture. Sorry! I then creamed together the butter and sugar. I’ve got a picture of that one!
Then I added the vanilla and eggs, one at a time. Then, some flour and some milk, alternating between the two until they were all mixed in. It’ll look like this when it’s done.
Now, remove the mixture from the mixer (tongue twister) and fold in the sour cream. Notice, I said fold. Don’t stir it in or else you’ll loose the air that was mixed into your batter, resulting in a dense cake. Not yummy! It’ll look like like this if done correctly… Light and air-y!
Then pour the mixture into your greased baking dishes (in this case I used 8″ cake pans), and bake at 300º for about 2 hours. It’ll look like this when it comes out of the oven.

Allow the cake to cool on a cookie rack and there you have it! Top with fresh cream, berries, a glaze, whatever you want. You’re sure to enjoy this decadent treat!!
