5 Minute Fix: Mediterranean Veggie Salad
Easy Summer Lunch
Just as Fresh as It Is Tasty!
The other day, I went on a scavenger hunt through my fridge. I was searching for something yummy, fresh, light, and healthy. I didn’t think it was possible to have all that in ONE meal, but whoa! Was I wrong?! This Mediterranean Veggie Salad is all that AND a bag of chips! Does anyone even say that anymore? Well, I just did! The combination of some of my favorite ingredients make for the perfect summer lunch that is quick and doesn’t hold back on the flavor.
This salad is so yummy. I just can’t get enough of it.
I mean c’mon! Look at this pile o’ goodness!
The ingredients are inspired by the Mediterranean culture– chickpeas, roasted red peppers, feta cheese. There’s some regular old salad stuff in there too, like lettuce (duh!), red onion, cherry tomatoes and cucumbers. I threw some chopped eggs on there just for some protein. I know it’s a veggie salad but I needed a little something. I’m not a vegetarian, y’all. (Not judging those of you who are though!)
I decided to make a meal of it. Got some of my FAVORITE croutons (Texas Toast brand. They are soooooo good!) and some Kool-Aid. I didn’t have any other juice in the house But, the salad made up for it. It was just that good!
Oh! I made my favorite salad dressing too! Lots of favorites today! You ready for it?! Just mix Balsamic Vineagrette and Italian Dressing and you’ve made the best dressing. So quick! Sweet, tangy, easy, yummy.
Well there you have it. A 5 minute summer lunch that will be light and refreshing. Try it! You’ll thank me later!
